Ingredients:

  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced

  • 1 cup cooked quinoa or brown rice
  • 1 tbsp sesame oil
  • 2 tbsp low-sodium soy sauce or coconut aminos
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced
  • Optional: sesame seeds and crushed peanuts for topping

Instructions:

  1. Heat sesame oil in a skillet or wok over medium heat.
