Quick Vegan Recipe – 5-Minute Avocado Chickpea Mash
Perfect for a light lunch or snack — plant-powered, protein-rich, and mood-boosting.
Ingredients:
- 1 ripe avocado
- 1/2 cup canned chickpeas (drained & rinsed)
- 1/2 lemon (juiced)
- Salt & black pepper to taste
- Optional: chopped parsley, red chili flakes, or diced cucumber
🍴Directions:
Mash everything together in a bowl with a fork until creamy but still a bit chunky. Spread on toast, scoop with crackers, or stuff into lettuce wraps. Done in 5 minutes!
